Agnes
22 Agnes Street, Fortitude Valley

Agnes is an undiscovered corner of Fortitude Valley, an old brick warehouse that has been transformed into a celebration of wood-fired cooking and beautiful pendant lights.  Agnes is the by the Same Same and Honto’s Tyron Simon, Bianca Marchi and Frank Li, and ex-Gerard’s Bistro head chef Ben Williamson.   The carefully appointed wine cellar runs to a impressive 1500 bottles. Ben Williamson’s team of chefs is split across two long, low-set counters and works solely with crackling wood fire and smoke – there’s no gas, no electricity.

Chef and Agnes co-owner Ben Williamson invites you to experience wood-fired cooking with no tricks or artifice, just the best local produce transformed over a custom-made stone hearth.

The venue itself sits in an ancient, wedge-shaped hillside warehouse in a forgotten Fortitude Valley side street. The main floor is looked over by a smaller mezzanine-level private dining room. There are two bar areas – one down a short flight of stairs that doubles as a cosy holding pen for those waiting on a table, and an upstairs terrace with views across the CBD and the Valley.

Chef, Ben Williamson has designed a straightforward menu of snacks, entrees, seven house-made pasta dishes and a clutch of main courses focussed on perfecting simple, classic Italian dishes with a nod to the Australian climate. The pastas are intended to rotate, although always on the menu will be a paccheri pomodoro with stracciatella, and a pork and fennel lasagna made popular by Agnes’s pop-up bakery.

Together, they honouring classic French flavours while breathing new life into the cuisine. Lighter dishes, such as Moreton Bay oysters with mignonette and cured king salmon with buttermilk and dill oil, lead to heartier options such as the suckling pork cassoulet, duck breast with caramelised witlof and golden raisins.
